This course will explain the origins and early use of chuck wagons on cattle trail drives and ranches, as well as demonstrate cooking techniques over a wood fire, cooking equipment and cowboy jargon. Class participants can also experience hands-on cooking activities. After the presentation, the instructor will serve a meal from the wagon. Monica Hightower is the owner and award-winning cook of the HX Chuck Wagon of Lubbock, Texas. The HX is a family heirloom wagon that cooks on ranches as well as for educational events, competitions and caterings. Hightower has more than 20 years of experience cooking on the wagon and enjoys preserving this historical aspect of the American West.
